Riassunto: | The consumption of sotol has great acceptance in Northern Mexico, because about 500 000 liters are produced annually. This industry presents an annual growth of 5% and the study aimed to analyze the value chain of artisanal sotol and suggest strategies to producers in Delicias, Chihuahua, to increase their income and identify opportunities for improvement. Surveys were conducted to 20 producers of the and it was concluded that the value chain has a simple structure, an organizational strategy is missing and they have a denomination of origin that guarantees the identity and elaboration of an original and unique flavor. |
