Riassunto:This paper answers a question often invisible for the university teachers: How does the professor (he/she) knows what is the appropriate educational content for the subject? To address the issue, we conducted a study about the strategies to develop academic program courses contents for teachers from the Nutrition Program of the UACJ. The research was qualitative, participating 30 professors. A questionnaire was used in this study including a group session. The findings relate to how to select educational resources is associated with the teaching culture and the paradigm on its practice in all aspects: ideas, customs, values, educational background, and experiences, among others. It was noted that the conceptions of the professors have a significant weight, indicating that they do not only influence the academy and the development of a special subject field, but this can harm or benefit the training of future professionals, the academic development, community needs and social system.
